We caught up with Chef Faraaz Vincento Panaino; who heads up the kitchen at the Greyville Race Course in Durban, KZN.

With a unique heritage stemming from his Italian and Indian roots; we had to test his spice-blending capability with his own Butter Chicken recipe!

Butter chicken originated in India, a dish where the chicken is marinated for hours & then roasted in a tandoor oven (traditional clay oven) and finally served in a rich, creamy curry sauce. There are also many theories behind whether butter chicken is actually made with butter, or if it’s just due to the soft texture of the chicken.

“Well my butter chicken recipe certainly contains a substantial amount of butter; yes, it is unhealthy, but so unbelievably full of flavour!” says Faraaz. “I’ve picked up my knowledge of spices from my mom’s side of the family, them being Indian, and coming from a catering background, I’ve inherited the trait. I use that as the backbone of my cooking, and add in a few of my own concepts, flavours and ideas to give you what I serve in my establishment.

I’ve eaten a lot of butter chicken at many different establishments and was very impressed with a few of them so I’ve decided to create my own version of this remarkable dish and was pretty impressed with the outcome.

My trick to making a tasty curry is to blend together ripe jam tomato with fresh coriander, chili & mint, also add a hint of lemon if you’re cooking a chicken curry or seafood curry for that extra kick!”
