  • Yeast, instant 10.0 g
  • Sunflower oil 30.0 ml

A delicious beef mince curry served with the good old South African favourite – Magwinya - a bread dough shaped into balls and deep-fried to perfection.

Preparation

  1. Step 1

    Mince Curry:
    • Finely chop the onion. Keep the mince aside.
    • Heat the oil, fry the onions for 2 min. Add the mince, Rajah Medium Curry Powder, Knorr Aromat Original and brown the mince. Add the Knorr Tomato Pronto and water and simmer on a medium heat stirring occasionally for 20 to 30 min, remove from the heat and set aside.

    Magwinya/Vetkoek:
    • Shift the flour, sugar, and salt together. Mix the instant dry yeast, oil and lukewarm water together. Make a well in the center of the flour mixture and pour in the water mixture and cut the mixture with a knife until combined, dough will be sticky. Flour a surface with the extra flour, place the dough on the floured surface and start to knead the dough for 5 -10 min add extra flour if need be but make sure the dough remains sticky. Grease a bowl with oil and place the dough inside wrap tight with clingfilm, place in a warm place to rise for 15 min. Remove the dough from the bowl and place on a floured surface and knock the dough down (knead again for 5 min, put back into a greased bowl sealed tightly with clingwrap and allow to proof for 1 hr. Remove the dough from the bowl, portion into even size portions and roll into balls and flatten with your hand. Heat the oil and fry the Magwinya turning over until golden brown, remove from the oil and drain on paper towel.
  3. Step 3

    • To assemble: Slice the Magwinya halfway through and fill with the beef mince curry place in a grab-and-go container and serve.
  4. Chef's Tip

    • Vetkoek can also be filled with chicken mayo, vegetable curry or even a chicken curry.
