  • Panko breadcrumbs 60.0 g
  • Bread crumbs 40.0 g
  • Cheese, Parmesan 40.0 g
  • Olive oil for frying 125.0 ml

Golden and crispy chicken, fried to perfection and smothered in Prego sauce, topped with bubbling melted cheese. Does it get any better?

Preparation

  1. Method:

    1. Whisk together eggs, garlic, parsley, salt, and pepper in a shallow dish. Add chicken into the egg, rotating to evenly coat each fillet in the mixture. Cover with plastic wrap and allow to marinate for at least 15 minutes (or overnight night if time allows for a deeper flavour). 
    2. When chicken is ready for cooking, mix breadcrumbs, Parmesan cheese and Robertsons Veggie Seasoning together in a separate shallow bowl. Dip chicken into the breadcrumb mixture to evenly coat. 
    3. Pre-heat oven to 180-200 °C. Lightly grease an oven tray (or baking dish) with nonstick cooking oil spray; set aside. 
    4. Heat oil in a large pan over medium-high heat until hot. Fry chicken until golden and crispy, (about 2-3 minutes each side). 
    5. Place chicken on prepared baking tray / dish and top each breast with about 125 ml of sauce (sauce recipe below). Top each chicken breast with an equal portion of mozzarella cheese and equal parmesan cheese. Sprinkle with basil or parsley.
    6. Bake for 6-8 min, or until cheese is bubbling and melted, and the chicken is completely cooked through
  2. For The Sauce:

    1. Heat oil in a medium-sized pot. Fry onion until transparent (about 3 min), then add the garlic until fragrant (about 30 sec). 
    2. Add Knorr Professional Prego Sauce, salt, and pepper to taste and Italian herbs. Cover with lid to simmer for about 5 min, or until sauce has thickened slightly. Taste test and adjust salt and pepper, if needed.
  3. For The Topping:

    1. Sprinkle on grated mozzarella cheese and grated parmesan cheese and melt. Add chopped basil on top.
