Ingredients

Mango Salsa

  • Mango, ripe, small dice, 2 large
  • Tomatoes, roma, small dice, small 4 whole
  • Red onion, small dice 1 whole
  • Coriander, chopped finely, 1 bunch
  • Jalapenos, small dice, 4 medium
  • Lime, juiced 3 whole
  • Olive oil 4 tbsp
  • Red wine vinegar 2 tbsp
  • Salt & pepper, to taste

Raw Pickled Herring Skewers – Flame Broiled

  • Herringfillets, fresh, sardines or mackerel can be used, 20
  • Sugar, castor 30 g
  • Tartaric Acid 30 g
  • Sea salt 10 g

Raw meets fire. These dry-cured herring skewers are flame-broiled and served with a bright mango pico and spicy mayo. Nordic pickling meets Latin punch – a fresh, fiery fusion that’s equal parts sweet, sharp, and smoky.

Preparation

  1. Mango Salsa

    1. Dice all ingredients. 
    2. Mix together in a bowl and refrigerate. 
    3. Toss before serving.
  2. Raw Pickled Herring Skewers – Flame Broiled

    1. Add the sugar, tartaric acid, and sea salt to a spice mill/mixer and blend to a fine powder. 
    2. Add the powder to the meaty side of the herring fillets, and let it marinate in the fridge for at least 4 hours. 
    3. Flame-grill the fillets on wooden skewers on the grill or with a burner and serve with spicy sauce.
  3. Plating

    1. Serve the flame-grilled skewered herring with a side of mango salsa
    2. Garnish with additional chopped coriander if desired.
