  • Cake flour 750.0 g
  • Baking powder 10.0 ml
  • Bicarbonate of soda 2.5 ml
  • Sugar 5.0 ml
  • Salt 2.5 ml
  • Robertsons Black Pepper 800 g 2.5 ml
  • Parsley, fresh 50.0 ml
  • Butter, melted 60.0 g
  • Cheddar cheese, white, grated 150.0 g
  • Buttermilk 500.0 ml
  • Eggs
  • Water 125.0 ml

Authentic home-style herb bread made with fresh mixed herbs, cheese, and buttermilk, baked until golden brown and served with butter. Excellent as a side dish or appetizer!

Preparation

  1. Method

    1. Pre-heat oven to 180 °C. Line a cast iron pan with greaseproof paper. 
    2. In a large mixing bowl whisk together the flour, baking powder, baking soda, sugar, salt, and pepper. 
    3. Mix in the parsley, Robertsons Mixed Herbs and cheese with a fork until it’s well combined and nothing is clumped together. 
    4. In a separate bowl whisk together the buttermilk, egg, melted butter and water. 
    5. Make a well in your dry ingredients and pour the wet ingredients in the centre. 
    6. Use your fork to mix until the ingredients start to combine, (dough will be lumpy). Then use your hands or a spatula to finish mixing and bring it together into a ball. (If your dough seems too wet to form into a ball, just sprinkle with a little extra flour and pull together.) 
    7. Empty the dough onto the middle of the skillet lined with greaseproof paper and gently re-form into a ball (don’t push out to the sides, it will rise and spread in the oven). 
    8. Make an “X” in the top of the dough with a serrated knife. 
    9. Bake for 40-45 min, or until it’s golden brown and cooked through. 
    10. Remove the loaf from the cast iron pan using the greaseproof paper and place it on a cooling rack. (Optional: immediately brush with a little melted butter.) Let cool for at least 15 min before slicing and serving. 
    11. Serve with butter.
