A wholesome and nutritious lentil and butternut bobotie that's packed with flavour from fresh ingredients, giving you that healthy goodness.

Preparation

  1. Method

    1. Heat oven at 180 °C
    2. Cover lentils with water and simmer for 45 min until soft.
    3. Heat olive oil in a large pot and sauté the onions.
    4. Add the butternut and cook covered over a medium heat for 5 min.
    5. Add garlic, chilli paste, Robertsons Rajah Medium Curry Powder, bay leaves and lentils.
    6. Add the Knorr Tomato Pronto, and Knorr Professional White Sauce Base and simmer for 15 min with the lid off.
    7. Stir in soaked bread and mix well.
    8. Place the mixture into a half insert and spread evenly.
    9. Pour the egg and milk mixture over the lentil and butternut mixture.
    10. Bake for 45 min until the custard is set and brown.
    11. Serve with basmati rice and chutney.
  2. Chefs Tip

    Substitute olive oil with sunflower oil.
