Preparation

  1. Method:

    1. Pat fillets dry.
  2. Marinade:

    1. Make up the marinade and apply onto the hake fillets. Allow to marinate for a few hours in the fridge. Keep the remaining marinade aside.
    2. Place the marinated hake on a roasting tray and grill at 200 °C for 10 min.
    3. Pour the remaining marinade into a saucepan and bring to a boil. Add butter and cream/yoghurt and bring to a boil. Pour sauce over the grilled hake.
  3. Spiced Rice:

    1. Cook rice according to packet instructions and set aside.
    2. Heat oil in a separate pot. Add onions and sauté until translucent.
    3. Add all the vegetables and cook for 5-10 min.
    4. Add Robertsons Veggie Seasoning and Robertsons Savoury Rice and cook for another minute while stirring. Add a little water to prevent burning.
    5. When vegetables are soft, empty into rice and mix well.
    6. Add Knorr Professional Prego Sauce, stir well and cook for 2 min.
    7. Serve with marinated grilled hake.
  4. Chef tip:

    1. Use a paper towel to pat each fish dry before cooking. This will remove the moisture from the outside of the fish and won't make the fish dry out and will ensure that it has the right flaky texture when it cooks and will prevent the fish from having an unpleasant mushy texture.
    2. Substitute the vegetables with Frozen mixed veg to reduce time and cost.
