Preparation

  1. Method:

    1. Pre-heat your oven to 180 °C.
    2. Prepare the Lamb Chops: Pat the lamb loin rib chops dry with paper towels. Season both sides of each chop generously with Robertsons Steak & Chops Spice. Heat olive oil in a large skillet over medium-high heat. Sear the lamb chops for 2-3 min on each side until browned. 
    3. Transfer the seared lamb chops to a baking dish. Pour the Knorr Professional Prego Sauce over the chops. Bake in the pre-heated oven for 10-15 min for medium-rare, or longer to your desired doneness. Reserve the leftover sauce.
  2. For the Truffle Mash:

    1. Bring the water to a boil with the butter and the Knorr Aromat Original. Once the water has boiled, remove from the heat, add in the milk and rain in the Knorr Professional Mash Flakes. Stir and put the lid on. After 5 min, remove the lid, stir in the truffle oil. Place the mash into a piping bag.
  3. For the Roasted Baby Carrots:

    1. Place the baby carrots on a baking sheet. Drizzle with olive oil and honey. Season with Robertsons Veggie Seasoning. Toss to coat evenly. Roast in the pre-heated oven for 20-25 min, or until tender and caramelised, shaking the pan halfway through cooking.
  4. For the Pea Mousse:

    1. Bring the water and the Knorr Professional Vegetable Stock to a boil. Add in the frozen peas and cook for 5 min. Transfer to a blender and add the milk. Blend until smooth. Pour the mixture into a Espuma gun, charge the gun and shake well.
    2. Pipe a generous portion of truffle mashed potatoes onto each plate. Arrange the baked lamb loin chops on the mashed potatoes. Serve the roasted baby carrots alongside the lamb loin chops and add the pea foam. Drizzle with the leftover prego sauce and garnish with micro herbs.
  5. Chef’s tip:

    1. Replace the lamb chops with beef fillet medallions for a different option.
