Salmon

Soba Noodle Salad

  • Dried soba noodles, 2 x 270 g
  • Cucumber , seeds removed, julienne 200 g
  • Radishes, julienne 150 g
  • Mint leaves 10 g
  • Thai basil leaves 20 g
  • Oil, Sesame 40 ml
  • Coriander leaves 20 g

To Serve

  • Spring onion, fried 50 g
  • Sesame seeds, toasted 20 g

A delicious and light Asian-inspired salad topped with salmon and served with Knorr Sweet Chilli Sauce for a milder finish.

Preparation

  1. Salmon

    1. Combine the Knorr Professional Soya Sauce, Knorr Professional Sweet Chilli Sauce and ginger to make the Teriyaki sauce. Split the Teriyaki sauce in half. 
    2. Marinate the salmon in half the Teriyaki Sauce.  
    3. Grill the Salmon in a hot pan and set aside.
  2. Soba Noodle Salad

    1. Cook noodles following on pack instructions and allow to cool. Combine the cucumber, radish, mint leaf's, Thai basil leaf's, sesame oil and coriander leafs and the other half of the Teriyaki sauce.
  3. To Serve

    1. Place noodle salad in a serving bowl, top with warm salmon, and pour over left over Teriyaki sauce. 
    2. Sprinkle with the fried spring onion and toasted sesame seeds.  
  4. Chef’s Tip:

    To add some heat to the dish, add 10 g of finely chopped red chilli to the Teriyaki sauce.
