Pulled Chicken with Brie, Coriander Pesto and Citrus Pizza

Preparation

  1. Preparation:

    • Pre-heat oven to 150 ˚C.
    • In a bowl, Add orange marmalade, tomato pronto, orange peel, garlic, ginger, chillies, cayenne pepper,, origanum and BBQ spice and mix well.
    • Add chicken breasts and ensure it well coated with the marinade.
    • Cover with foil and bake in a preheated oven  for 1,5 hours.
    • Remove from oven, allow to cool slightly and shred chicken breasts.
    • Pour the liquid from the roasting tray and cook until reduced by half and add to the chicken.
  2. To Assemble:

    • Top the pizza base with tomato base sauce, mozzarella and pulled chicken mix. Bake in hot oven for 10 minutes. Garnish with Brie and coriander pesto.
  3. Chef's Note:

    • You can never go wrong with chicken. Its so easy to dress up or down - as showcased in this showstopper! Brie (known as the Queen of Cheese) adds a element of class to this pizza.
