Pineapple Salsa

  • Pineapple, diced 400.0 g
  • Red bell peppers, diced 120.0 g
  • Jalapeno, seeded, finely chopped 120.0 g
  • Red onion, finely chopped 60.0 g
  • Coriander (fresh) 15.0 g
  • Lime juice, or lemon juice 30.0 ml
  • Salt 2.0 g
  • Olive oil 30.0 ml

Chicken breasts marinated and seasoned to perfection, grilled and served with a refreshing pineapple salsa made with red pepper, jalapeno, cilantro, and lime juice.

Preparation

  1. Method

    1. Combine all ingredients, except the chicken, in a large bowl. Stir to combine. 
    2. Season the chicken with salt and pepper and completely coat chicken with spice mixture. Cover and marinate in the refrigerator for at least 1 hour or overnight. 
    3. When ready to cook, heat the grill/griddle pan to medium-high heat. Cook the chicken about 6 min per side or until cooked through. 
    4. Serve with pineapple salsa.
  2. Pineapple Salsa

    1. Combine pineapple, red pepper, jalapeno pepper, red onion, cilantro, lime juice, salt, and oil in a small bowl for the salsa. Serve with the chicken.
